Comfort Food Recipe for A Busy April Day

We all know April showers bring May flowers. And you know what's made for these busy, rainy April days? Comfort food! We're mixing it up on the Encoursa blog with an easy recipe. Liz Briggson, CPA, CVA whipped this up while on a conference call (aka 15-20 minute prep time) earlier this week and everyone enjoyed it - from the 1 year old to Grandma! Check it out here:
Meatloaf Ingredients
- 1 lb ground turkey breast
- 2 medium sized eggs
- 1 1/2 cup oatmeal
- 1 cup frozen peas
- 1 cup shredded & chopped carrot
- 1/2 tbsp olive oil
- 1 tsp seasoning salt
- 1/2 tsp ground black pepper
- 1/2 tsp ground salt
- 1/2 cup ketchup x2
- 1/4 cup Djorn mustard x2
- 2 tbsp maple syrup x2
- 1 tsp Montreal Steak Seasoning x2
Instructions
Preheat the oven to 400 F.
Place the ground turkey, vegetables, eggs, oatmeal, seasonings, and condiments in a large bowl. Mix the ingredients using your hands. (I'm a fan of food service gloves when it comes to raw meat).
Mold the meatloaf into a bread pan and place in the oven for 25 minutes. Cover if desired to preserve moisture.
Mix the second batch of condiments + seasoning, remove from the oven, and cover the meatloaf with a nice layer of sauce, reserving some for serving.
Place the meatloaf back into the oven uncovered for 15 to 20 minutes. Use a food thermometer to cook to an internal temperature of 165 F.
Let the meatloaf sit for approximately 5 minutes before cutting into it.
Serve with a side salad, corn, or mashed potatoes for the ultimate comfort dinner.
